Preheat oven to 400 degrees F
- 2 1/2 cups all-purpose flour
- 1 ounce fresh yeast, dissolved in 3/4 cup tepid water
- 3 tablespoons olive oil
- Pinch salt
- 3/4 pounds fresh tomatoes, skinned and diced
- 1 pound sliced mozzarella
- 1/4 pound smoked ham
- 1/2 cup freshly grated pecorino
- 1 teaspoon fresh oregano, minced
- 1 teaspoon salt
- 1/4 teaspoon pepper

Pre-heat the oven to 325F
- Optional garnishes:
- 1 loaf sesame semolina or crusty baguette, bakery sliced
- 1 can white beans (15-18-ounces), rinsed and drained
- 3 tablespoons sesame tahini paste
- 2 cloves garlic, grated or minced
- 3 sprigs rosemary, leaves finely chopped
- Juice of 1 lemon
- Salt
- 2 tablespoons extra virgin olive oil (EVOO)
- Coarsely chopped green or black olives
- Chopped parsley and basil leaves
- Chopped roasted red peppers

Vinegar-Glossed Chicken

At least 15 minutes and up to 2 hours before cooking, combine the vinegar, garlic, and rosemary to marinate
- 1 cup best-quality red-wine vinegar
- 2 to 3 garlic cloves, minced (about 2 tablespoons)
- 3 sprigs of fresh rosemary (about 1 tablespoon minced)
- 5 1/2 pounds bone-in chicken pieces (each part should be cut in half)
- Coarse salt and freshly ground black pepper

- 2 tablespoons vegetable oil
- 1/3 cup coarsely chopped scallion
- 1 small (1-1/2 lbs.) napa cabbage, trimmed, leaves separated and stacked, halved crosswise and cut lengthwise into thin slices
- 1 yellow bell pepper, stemmed, seeded, and cut into thin strips

- 1/2 pound diced pancetta
- 2 cups diced yellow onions
- 1 cup diced celery
- 1 cup diced carrots
- 4 cloves garlic, sliced

Sloppy Bombay Joes

Begin by making the sauce: Warm the oil in a medium saucepan over medium heat, until it shimmers
- 2 tablespoons vegetable oil
- 1 tablespoon minced ginger
- 2 cloves garlic, minced
- 1/2 serrano chile, seeded and finely minced (save the other half for the turkey)
- 1 teaspoon garam masala
- 1/2 teaspoon paprika
- 1 (15-ounce) can tomato sauce
- 1 cup water
- 3 to 4 tablespoons vegetable oil
- Small handful shelled pistachios, about 1/4 cup
- Small handful raisins, about 1/4 cup
- 1 teaspoon cumin seeds
- 1/2 large white onion, finely diced
- 1 red bell pepper, seeds and membrane removed, finely diced
- 1/2 serrano chile, seeds intact (don't chop it up unless you like things spicy!)
- Kosher salt
- 1 pound ground turkey
