Season tenderloin lightly with salt and pepper
- Lightly salting a center-cut tenderloin, a.k.a. chateaubriand, overnight allows the salt to penetrate this luxurious roast and keep it extra-flavorful and juicy.
- 1 4-pound center-cut beef tenderloin, fat and silverskin trimmed
- Kosher salt
- 4 teaspoonsfreshly ground black pepper plus more for seasoning
- 2/3 cup fine fresh breadcrumbs made from day-old white bread
- 2/3 cup finely grated Parmesan
- 2/3 cup mayonnaise
- 4 anchovy fillets packed in oil, drained, finely chopped
- 4 teaspoons Dijon mustard
- 4 teaspoons finely grated lemon zest
- 2 teaspoons Worcestershire sauce
- 2 garlic cloves, finely chopped

- 3 to 4 pounds fresh large mussels (not Prince Edward Island), scrubbed and debearded
- 4 ounces Prosciutto di Parma
- 2 bunches of mint, leaves only, to yield 1/2 cup
- 2 bunches basil, leaves only, to yield 1/2 cup
- 1 bunch oregano, leaves only, to yield 1/4 cup
- 1 cup extra virgin olive oil
- 1 clove garlic, peeled

Preheat oven to 375°F. and butter a large baking dish
- For stuffing
- 1 cup chopped mushrooms (about 1/4 pound)
- 3 tablespoons minced onion
- 2 tablespoons minced celery ribs
- 1 tablespoon minced garlic (about 3 cloves)
- 3 tablespoons finely chopped fresh parsley leaves
- 3 tablespoons unsalted butter
- Sherry
- 1/2 pound scallops, chopped, or lump crabmeat, picked over
- 1/2 cup chicken broth
- 32 Ritz crackers (about two thirds of a 12-ounce package), crushed into coarse crumbs
- 18 jumbo shrimp (about 2 pounds), shelled, leaving tail and connecting shell segment intact

- 1/4 teaspoon paprika
