  • 8 ounces uncooked broken up lasagna noodles or rotini (I had 3 c. dry rotini)
  • 1 tablespoon olive oil
  • 1 medium onion, chopped (1/2 cup)
  • 1 pound lean ground beef
  • 1/4 teaspoon garlic powder, or to taste
  • 1 tablespoon dried parsley flakes
  • 2 teaspoons dried Italian seasoning
  • 1 teaspoon creole seasoning (such as Tony Chachere's)
  • 1 teaspoon salt, or to taste
  • 1/4 teaspoon ground black pepper, or to taste
  • Crushed red pepper flakes, to taste (optional)
  • 1 (6 oz) can tomato paste
  • 2 (14.5 oz) cans diced tomatoes (undrained)
  • 1 cup small curd cottage cheese
  • 1 (8 oz) package shredded mozzarella cheese, divided
