Balsamic Chicken with Mushrooms

Ingredients

  • 2 Tsp vegetable oil
  • 3 Tbsp balsamic vinegar
  • 2 Tsp dijon mustard
  • 1 Medium garlic clove, crushed
  • 1 Lb uncooked boneless, skinless, chicken breasts (four 4oz pieces)
  • 2 Cups fresh mushrooms, small, halved
  • 1/3 Cup chicken broth
  • 1/4 Tsp dried thyme, crumbled

Step 1

1. In a nonstick skillet, heat 1 tsp of oil

2. In a medium bowl, mix 2 Tbsp of vinegar, mustard, and garlic; add chicken, turn to coat

3. Transfer chicken and marinade to skillet, saute chicken until cooked through, about 3 minutes each side

4. Transfer to platter and keep warm

5. Heat remaining oil in skillet, saute mushrooms 1 minutes

6. Add broth thyme and remaining vinegar

7. Cook, stirring occasionally until mushrooms are deep brown, about 2 minutes

8. Serve, topped with mushrooms
