Nut Crusted Chicken Breasts

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup roughly chopped almonds or walnuts
  • 4 tbsp unsalted butter
  • 1 sm onion minced
  • 1 cup panko bread crumbs
  • zest of 1 lemon
  • 2 tsp thyme leaves minced
  • pinch of cayenne pepper
  • 3 large eggs
  • 2 tsp dijon mustard
  • 1/4 tsp black pepper
  • 1 cup flour

Step 1

Heat oven to 350 degrees. Poke each breast 5 times. Place on rimmed cookie sheet, sprinkle with salt and refrigerate.

In food processor, process nuts by pulsing till coarse. Heat butter in a pan until it turns golden brown, about 4-5 mins. Add onion and 1/2 tsp salt and stir. reduce heat to low, andd panko crumbs and ground nuts. Remove from heat and add in lemon zest, cayenne, and thyme. Transfer to a shallow dish as a pie plate.

Beat eggs, mustard and black pepper together in second pie plate.

Place flour in third pie plate.

Set up breading station. Pat dry chicken, dredge in flour, then egg mixture, then nut mixture. Transfer back to wire rack and bake for 20 mins, or until chicken registers internal temperature of 160 degrees.
