Cuban Pork Quesadillas

Ingredients

  • 1 lg garlic clove
  • coarse salt & pepper
  • 1 tbsp veg oil
  • 1 pork tenderloin (3/4-1 1/2lb)
  • 1 lg red onion, cut into 1/2 inch slices
  • 4 flour tortillas
  • 4 tbsp spicy brown mustard
  • 6 oz thinly sliced baked ham
  • 3-4 dill pickles, thinly sliced lengthwise
  • 8 oz provolone or swiss cheese, shredded

Step 1

Use the garlic and salt to make a paste. In a small bowl, combine with 1/4 tsp pepper and the oil. Rub all over pork.
Cook the pork on the hottest part of the grill until the thickest part registers 155 degrees. Let rest for 5 min and slice thinly across the grain.
Meanwhile place the onions on a cooler part of the grill. Cook, turning once, until soft and beginning to brown. About 10 min. Reduce heat to medium low.
Spread 1 tbsp mustard on each tortilla, leaving a 1/2 inch border. Dividing evenly, layer half of each tortilla with ham, pork, onion, pickles, and cheese. Fold tortillas and press to close.
Lightly oil grates. Place the quesadillas on the grill and cover. Cook, turning once, until browned and cheese is melted. Cut into wedges and serve immediately.
