Maple Bourbon Barbecue Pork Kebabs
- 1 LB. Boneless pork loin
- 3 ears of corn
- 1 Tbs. maple syrup
- 1/4 tsp. dry mustard
- 2 Tbs. melted butter
- 1 Tbs. spice rub
- 1/2 c. BarBQ sauce
- 1 Tbs. bourbon
- 1/4 tsp. vinegar
Cut pork into 1 inch cubes. Sprinkle spice rub over cubes and mix well. Cover and refrigerate 2 hrs. or overnight.
Remove husks from corn and wrap each ear in a damp paper towel. Microwave each ear individually at high power for 2 min. Cool. Cut into 1 inch chunks.
Combine syrup, mustard, B Q sauce, bourbon, and vinegar.
Alternate 4 pork cubes and three corn on each of 6 skewers. Brush com with butter.
Brush pork with B Q sauce. Grill over mid-hot coals for 10 min, turning occasionally. Serves 3
