You could also use 2-3 mini springform pans & serve one & freeze the others for later. I put the crackers in a gallon Ziploc & rolled over with a rolling pin & this process was very quick & easy.

Ingredients

  • 1 sleeve Ritz crackers, crushed
  • 1 stick butter, melted
  • 2 (8 oz.) pkgs. regular or light cream cheese
  • 1 cup regular or light sour cream, divided
  • 3 eggs
  • 1 tsp. lemon juice
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 lb. crabmeat or shrimp, chopped
  • 4 green onions, whites & greens chopped & separated

Step 1

Preheat oven to 350. Lightly coat as 9-inch springform pan with cooking spray. Combine cracker crumbs & butter in a medium bowl. Press into bottom of prepared pan. Bake for 10 minutes. Beat cream cheese & 3/4 cup sour cream with a mixer until smooth. Add eggs, lemon juice, salt, & pepper. Beat until smooth. Stir in seafood & white parts of the green onion. Pour onto crust. Bake on a foil-lined baking sheet for 50-60 minutes until top is lightly browned & center is set. Cover with foil the last 10 minutes if starts to scorch. Cool 20 minutes. Loosen sides of pan but do not remove until completely cooled. Transfer to a serving plate, cover with plastic wrap, & refrigerate until ready to serve. Combine remaining 1/4 cup sour cream & green part of green onions. Spread on top. Serve with crackers.
