Ingredients

  • 1 lb. fresh lump crabmeat
  • 1 bunch green onions, minced
  • 1 c. bread crumbs
  • 8 oz. package cream cheese, softened
  • 1 c. mayo
  • juice 1/2 lemon
  • 2 to 4 Tbsp. dry sherry
  • 1/4 tsp. cayenne
  • salt and white pepper
  • 6 English muffins, sliced and toasted
  • 1 tomato, sliced
  • cheddar or swiss cheese, sliced or shredded

Preparation

Step 1

Gently combine crab, green onions and bread crumbs in a large bowl. Blend cream cheese, mayo, lemon juice, sherry and cayenne. Add cream cheese mixture to crab mixture. Season with salt and pepper. Blend.

Preheat broiler. Top muffins with tomato slice, dollop of crab, then cheese. Place on baking sheet and under broiler long enough to melt cheese. Can also bake at 350 for 10 minutes.
