Hearty Mushroom Barley Soup

Ingredients
- 1 bay leaf,crumbled
- 1 large onion,diced
- 3 tbsp. oil
- 1 box fresh mushrooms,sliced
- 2 tbsp. flour
- 8 cups water
- 2/3 cup barley
- 1 stalk celery,diced
- 2 carrots, peeled and diced
- 2 tsp. salt
- 1/4 tsp. pepper

Preparation
Step 1
1. Saute onion and bay leaf in oil till tender. Add mushrooms and saute a few more minutes. Stir in flour till smooth. Gradually add water and then remaining ingredients. Bring to a boil and simmer for an hour.
2. Freezes well.
