Ingredients

  • 1 bay leaf,crumbled
  • 1 large onion,diced
  • 3 tbsp. oil
  • 1 box fresh mushrooms,sliced
  • 2 tbsp. flour
  • 8 cups water
  • 2/3 cup barley
  • 1 stalk celery,diced
  • 2 carrots, peeled and diced
  • 2 tsp. salt
  • 1/4 tsp. pepper

Preparation

Step 1

1. Saute onion and bay leaf in oil till tender. Add mushrooms and saute a few more minutes. Stir in flour till smooth. Gradually add water and then remaining ingredients. Bring to a boil and simmer for an hour.
2. Freezes well.
