Lentil Rice Soup

This recipe is from Costco Connection magazine. You can make this version for the slow-cooker or use canned lentils and make a faster version. Both are good.
Ingredients
- 6 c chicken broth
- 1 c lentils (2 cans, 14.5 to 15.5 ozs), rinsed and cleaned
- 2 medium carrots, peeled and finely chopped
- 1 medium vidalia onion, finely chopped
- 2 celery stalks, finely diced
- 3 tbs uncooked white rice
- 2 tbs minced garlic
- 1 tsp herbes de provence
- 1/2 tsp salt
- 1/8 tsp black pepper
- 1/4 c heavy cream, sour cream, divided
- 1/4 c chopped parsley, divided

Step 1
In the slow cooker, stir broth, lentils, carrots, onion, celery, rice, garlic, herbes de provence, salt and pepper. Cover and cook on low for 8 hours or on high for 4 to 5 hours.
Remove 1/2 c soup and puree in a food processor or blender until almost smooth. Stir pureed soup back into the slow cooker.
Divide soup evenly among 4 bowls and add 1 tbs heavy cream and sour cream and 1 tbs parsley. Serve.
