- 3 c. sifted all purpose flour
- 4 eggs
- 1 tsp salt
- 1 tbs olive oil
Make mound of flour in center of large board. Make a well in the center of the flour. Break the egg into well. Spring on the salt and add oil. With fingertips of one hand slowly mix the eggs into the flour, gradually break away walls of the well. WHen all the eggs are mixed with flour. Knead dough until smooth and elastic. It will be very firm and quite smooth. Take about 10 minutes. Cover dough with inverted bowl to prevent it from drying out while shaping pasta. Cut off piece of dough, form into rectangle. Cut strips byu hand. Cook the pasta in large pot of slightly salted boiling water until just tender (30 second to 1 min) after water returns to boil.
