Leg of Lamb

Ingredients
- 1 leg of lamb
- 3-5 heads of garlic
- Oregano
- Olive oil
- Butter
- Salt
- Pepper

Step 1
Begin by cutting small slits the leg of lamb; you want to have slits all the way around the lamb, every two inches or so.
In each slit, stuff a clove of garlic, a slice of butter, a big pinch of oregano, salt, and pepper. Dribble olive oil into each slit, and rub it all over the lamb.
Wrap the lamb several times in heavy duty tin foil, then bake in a large roasting pan for an hour at 375 degrees. Reduce the temperature to 325 and bake for another 3 or 4 hours, depending on the size of the leg.
Unwrap and enjoy. With about 45 minutes left, my mother often adds potatoes into the roasting pan. She pierces the tin foil so the lamb juices spill out and cook into the potatoes.
