  • 1 tsp grated lime rind
  • 3 T fresh lime or lemon juice
  • 1 T tequila
  • 2 tsp sugar
  • 2 tsp vegetable oil
  • 1/2 tsp salt
  • 1/2 ts[ grated orange rind
  • 1 garlic clove
  • 4 6 oz salmon fillets
  • 8 oz uncooked angel hair pasta
  • Cooking spray
  • Lime slices



Step 1

1. Combine first 8 ingredients in a large zip top plastic bag; add fish to bag. Seal and marinate in refr 20 min,

2. Cook pasta, omitting salt and fat. Drain and keep warm

3. Preheat broiler

4. Place fish on a broiler pan coated with cooking spray; broil 7 min or until fish flakes easily when tested with a fork. basting occasionally with reserved marinade. Serve over pasta. Garnish with lime, if desired.
