Roast Turkey

  • Whole Turkey
  • Kosher Salt
  • 8 oz truffle butter at room temperature (black or white)
  • 1 large onion-cut into wedges
  • 1 head of garlic-cut in half
  • 1 bunch of thyme-reserve 3 sprigs
  • 1-2 tbs olive oil
  • pepper



Step 1

Preheat oven to 325 degrees F

Remove neck and gibblets from the turkey and rinse well and pat dry

Generously salt the cavity

Separate the skin from the breast with your hand and rub under the skin with truffle butter

Stuff the cavity with the onion, garlic, and thyme

Rub the entire turkey with olive oil

Sprinkle the top with salt, pepper, and remaining thyme leaves

Roast until a meat thermometer reads 165 at thickest part of the breast and thigh (times vary depending on size)
