Bowtie Pasta Toss

Ingredients

  • 1/2 lb bowtie pasta, uncooked
  • 1 1/2 cups frozen peas
  • 4 slices low fat ham, cut into julienne strips
  • 4 tomatoes, diced
  • 1/4 cup parmesan cheese
  • 3 tbsp margarine
  • 1 clove garlic, minced
  • juice of 1/2 a fresh lemon
  • 1/2 tsp freshly ground pepper
  • 1 tsp chopped fresh thyme

Preparation

Step 1

Cook pasta in boiling water following package directions. Add peas to paste water 4 minutes before the end of cooking time.

Meanwhile, in a serving bowl, toss together ham and tomatoes. In a smaller bowl, mix together margarine, garlic and lemon juice.

When pasta and peas are cooked, drain well and toss with both tomato and margarine mixture. Toss with parmesan cheese and thyme.

Serve immediately.
