Cashew, Raisin Rice with Turmeric

Ingredients
- 1 1/2 cups - basmati rice
- 1 can - coconut milk
- 1 1/4 cans - chicken stock
- 3/4 cup - cashew halves
- 1/2 cup - raisins
- 1 tbsp - vegetable oil
- 1/2 tsp - ground cumin
- 1/2 tsp - ground coriander
- 1 pinch - crushed red pepper flakes
- 1 tsp - salt
- 1/4 tsp - ground turmeric
- 1 - bay leaf

Method
1. Heat oil in a large pot over medium-high heat.
2. Stir in rice, and cook for 2 minutes.
3. Pour in the coconut milk, chicken stock, cumin, coriander, red pepper flakes, salt, turmeric, bay leaf, raisins, and cashew halves.
4. Bring to a boil, then cover, and reduce heat to low.
5. Cook until rice is tender, about 20 minutes.
