Ingredients
- 6 T butter
- 2 C cooked eggplant cubed
- 1 T onion (chopped)
- 1 tsp. salt
- 1/4 tsp black pepper
- 1 c milk
- 1 c cracker crumbs
- 1 c American cheese cubed
- 2 eggs beaten

Step 1
Add butter to hot egg plant. Mix until melted. Add remaining ingredients, mix well. Pour into greased casserole dish. Bake 325 until center rises about 30 minutes
