My Mom's Stuffing recipe for 12 # turkey

Ingredients

  • 12 cups dried bread cubes
  • 1 cup of butter (2 sticks)
  • 1 1/2 cup chopped onion
  • 1 1/2 cup chopped celery (I use the center leaves too)
  • 2 tablespoons salt
  • 1 teaspoon pepper
  • 1 to 2 tablespoons of a combination of rubbed sage, thyme, & poultry seasoning.
  • Rich chicken or turkey broth & milk to moisten stuffing

Melt butter in large skillet. Add onions and celery and sauté until onions begin to soften. Stir in seasoning and cook over very low heat for a few minutes until flavors start to blend. Stir in some of the dried bread to absorb all of the butter mixture. Mix into the rest of the bread cubes. (You can to this much the day before to save time) Let cool & then cover.

Add warm broth to the bread mixture to moisten well. You can add a little milk if you need extra liquid. Let the mixture cool completely before stuffing the bird. (cold milk will speed up this process).

If you bake the dressing in a casserole it generally takes 45 minute to a hour to bake depending on the container and the oven temperature.
