Sausage Gravy

Ingredients
- 1 lb breakfast sausage, crumbled and cooked, 4 tablespoons drippings reserved (I use Jimmy Dean's roll sausage)
- small onion, minced + cooked with sausage (optional)
- 3 tablespoons unbleached all-purpose flour
- 2 cups milk or cream
- salt and black pepper to taste

Preparation
Step 1
Transfer the cooked sausage mixture to a bowl, reserving 4 tablespoons of the drippings. Stir the flour into the drippings and cook over medium heat until the mixture is bubbly. Stir in the milk, a bit at a time, stirring all the while; the mixture may seem lumpy at first, but just keep stirring and it'll smooth out. Once you've added all of the milk, cook over low heat, stirring occasionally, for about 3 minutes. Add the sausage, stir to combine, and season to taste with salt and pepper. Serve over hot biscuits.
