Roasted Leg of Lamb

- 1 Leg of lamb
- 2-3 cloves of garlic
- 2 small pieces kefalotiri or kasseri cheese
- dried oregano
- salt
- pepper
- olive oil
- 2 carrots
- 2 celery stalks

Preparation
Step 1
1. Preheat oven to 400 degrees. F.
2. Wash leg of lamb and pat dry.
3. Cut slits in lamb and insert garlic (cut into smaller pieces) and kefalotiri/kasseri (cut into smaller pieces).
4. Season generously with salt, pepper and oregano.
5. Place leg of lamp in parchment paper and place in a roasting pan. Drizzle olive oil on top.
6. Place carrots and celery stalks on either side of leg and seal leg completely in parchment paper.
7. Cover pan and place in 400 degrees F. oven for 1 hour. Reduce heat to 350 degrees F. and cook for approximately 2 hours more.
8. In last half hour, remove lid and open up parchment paper, exposing meat to heat. Let lamb get golden brown and crisp.
9. Serve immediately, with drizzles of its juice.
