Ingredients

  • 12 large skewers
  • 1 egg
  • 1 slice white bread
  • 3 garlic cloves, minced or 2 tsp. chopped jar garlic
  • 1 1/4 cup finely chopped fresh mint, parsley or coriander
  • 1 tsp. ground cumin
  • 1/2 tsp. each: cinnamon and salt
  • 1 lb. (500g) ground beef

Oil grill and heat barbecue to medium. Soak wooden skewers in water. In medium bowl, whisk egg. Tear bread and crusts into pieces, then add to egg. Mash until bread soaks up eff. Stir in spices. Crumble in beef. Using fork, gently mix together, do not overwork. Divide into 6 portions. Form logs about 4" long. Flatten. Place 2 skewers 1/2" apart lengthwise on flattened meat. Mould meat firmly around skewers. Repeat. Place meat on grill. BBQ covered 4 mins., then gently turn. Continue to BBQ 4-5 mins. more until cooked. For indoor grill, close lid and grill 5-6 mins. Or broil 3-4" from top about 10 mins, without turning.
