Ingredients

  • Sauce:
  • 1 pkg noodles
  • 1/2 # small scallops
  • 1/2 # crab
  • 1/2 # small shrimp
  • 2 c ricotta
  • 3 T parmesan
  • 4 egg yolks
  • 1/8 tsp nutmeg
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp sugar
  • 4 T chives –minced or scallions
  • Option: Add 1 diced red pepper and 1 pkg cooked chopped frozen spinach
  • 2 T butter
  • 2 T flour
  • 2 c heavy cream
  • 2 c seafood broth (clam broth or seafood bouillon cubes)
  • 1/2 c white wine
  • 8 oz combination of Monterey Jack & cheddar cheese

Preparation

Step 1

1.Prepare noodles & cook al dente; keep in cold water, drain
2.Sauté scallops & add a tad of garlic powder
3.For sauce - Melt butter & whisk in flour – add cream and broth and simmer till reduced to about 3 cups. Add wine.
4.Spray 9x13 pan. Spoon ladle of sauce to cover pan bottom. Layer seafood, cheese, sauce, pasta – sprinkle with cheese.
5.Bake 350 for 45 min. Let sit for 10 min. before serving
