Ingredients

    medium russet potatoes, peeled and cut into sixths

  • 1

    large garlic cloves, very finely chopped

  • 1

    teaspoon paprika

  • 1

    teaspoon dried oregano

  • 1/2

    teaspoon salt

  • 1/4

    teaspoon freshly ground pepper

  • 2

    pounds of best chicken pieces you can find, such as Amish chicken, bone-in, skin-on

  • 1/2

    pound sweet Italian sausage, cut into 1-inch pieces on the diagonal

  • 3

    tablespoons extra-virgin olive oil

Directions

Preheat the oven to 425F. In a 10-inch round baking casserole, arrange the potatoes to cover the bottom. In a small bowl, mix the garlic, paprika, oregano, salt and pepper. Sprinkle half of the seasoning over the potatoes. Lay the chicken and sausage pieces on top of the potatoes. Pour the olive oil over the ingredients and sprinkle with the remaining seasoning. Cover with foil and bake for 30 minutes. Reduce the heat to 375F, remove the foil, and bake until the chicken becomes golden brown and the sausage browns, about 45-55 minutes. Serve hot.
