Ingredients

  • 3 tablespoons kosher salt
  • 4 tablespoons extra virgin olive oil
  • 1/2 cup tomato paste
  • 1 tablespoon red hot pepper flakes
  • 1-1/2 cups Pomi chopped tomatoes
  • 1 pound penne
  • Maldon or other flaky sea salt
  • Grated parmigiano-reggiano for serving

Step 1

Bring 6 quarts water to boiling
In another skillet, put 4 tablespoons olive oil over medium heat, and then add tomato paste and red pepper flakes; reduce heat to low and stir until fragrant, about four minutes.
Stir in tomatoes and remove from heat.
Cook pasta until al dented and drain, reserving 1/4 cup liquid.
Add pasta and reserved water to the sauce and coat well. Stir and toss over medium heat. Add remaining oil and serve immediately with grated cheese.
