Teriyaki Pulled Pork Sandwiches

Ingredients

  • 1 boneless pork shoulder roast (3lbs)
  • 2 tsp. olive oil
  • 1 c. finely chopped onion
  • 1 c. teriyaki sauce, divided
  • 1/2 c. unsweet pineapple juice
  • 3 tbsp. flour
  • 8 whole wheat hamburger buns, split
  • 1 can (20oz.) sliced pineapple, drained

Step 1

In large skillet, brown roast in oil over med.-high heat. Cut in half; place in 5qt. slow cooker. Add onion, 1/2 c. teriyaki sauce, and pineapple juice. Cover and cook on low 7-8 hours or till meat is tender.
Remove roast; set aside. In small bowl, combine flour and remaining teriyaki till smooth; stir in cooking juices. Cover and cook on high 30-40 min. or till thickened.
Shred meat w/ two forks; return to slow cooker and heat through. Spoon 1/2 c. onto each bun; top w/ a slice of pineapple.
