Ingredients
- 3 lbs. ground beef or venison
- 2 lbs. ground pork
- 2 TB. MEDIUM HOT CRUSHED RED PEPPER FLAKES
- 3 TB. KOSHER-STYLE FLAKE SALT
- 1 TB. RUBBED SAGE
- 3 TB. COARSE GROUND BLACK PEPPER
- 1 TB. GRANULATED GARLIC POWDER
- 1 Cup ice water.

Preparation
Step 1
Place the meat in a large bowl. In a separate bowl, combine the SPICES and ice water and stir to combine. Add the SPICE/water mix to the meat and mix thoroughly. It's easiest to use your hands, though a hand potato masher works as well. Cover and refrigerate for at least 30 minutes to allow the flavors to meld. Shape into patties and fry in a hot pan. We made 2 oz. patties, and cooked them about 4 minutes per side over medium heat.

Cooking time: 8 minutes per patty
Yield: 60 sausage patties
