Ingredients
- 1/4 cup chopped onion
- 1 tbsp oil
- 1 garlic clove pressed
- 1 tbsp dark brown sugar
- 2 cups rice
- 4 cups chicken stock
- 1/2 cup coconut milk
- 1 can pigeon peas drained
- 1/2 tsp salt
- 2 tsp ketshup

Preparation
Step 1
!. Saute garlic in oil
2. remove garlic from pan
3. melt dark brown sugar in oil
4. slowly add rice to brown sugar and oil allowing rice to brown
5. slowly add chicken stock
6. bring to a boil and add 1/w tsp salt, 2 tsp ketchup, 1/4 cup onion and 1 can oigeon peas
7.reduce heat cook covered for 20 minutes
8. add 1/2 cup coconut milk cook uncovered until all absorbed
