Mushroom Chicken in Dijon-Wine Sauce

Ingredients

  • 4 boneless skinless chicken breast halves
  • 1/4 c. flour
  • 2 TBSP flour
  • 4 c. fresh mushrooms, sliced
  • 3 TBSP Grey Poupon dijon mustard
  • 1/2 c. dry white wine
  • 2 TBSP chopped fresh parsley

Preparation

Step 1

Rinse chicken; pat dry. Coat chicken with flour; shake off excess. Heat oil in large skillet on medium-high heat. Add chicken; cook 8 - 10 minutes on each side until browned on both sides. Remove chicken from skillet, reserving drippings in skillet; cover chicken to keep warm.
Add mushrooms to drippings in skillet; cook and stir 2 - 3 minutes or until the mushrooms are tender. Stir in mustard and wine; return chicken to skillet.
Bring to boil. Reduce heat to medium-low; cover. Simmer 7 - 10 minutes or until chicken is cooked through. Sprinkle with parsley.
