Ingredients

  • topping:
  • 1 C Italian bread crumbs
  • 1/2 C milk
  • 2 T olive oil
  • 1 small onion chopped finely
  • 2-3 stalks of celery chopped finely
  • 1-2 # ground turkey
  • 1/2 C shredded parmesan cheese
  • 1/2 C shredded carrots
  • 1/4 C ketchup
  • 1 t salt
  • 1/8 t black pepper
  • 1 T garlic minced
  • 1/4 C tomato sauce
  • 1/4 C ketchup
  • 4 slices of precooked bacon crumbled or cut small
  • cooking spray

Preparation

Step 1

Preheat oven to 350 and spray a loaf pan with non stick cooking spray.

Soak bread crumbs in the milk. Heat oil in a skillet and sauté onion and garlic until beginning to become clear add celery and cook a few minutes longer. Remove onion, garlic and celery mixture from skillet and combine with milk and breadcrumb mixture.

Add cheese, carrots, ketchup, salt, pepper to the breadcrumb and onion mixture. Mix well then add ground turkey to the mixture mixing well.

Press turkey mixture firmly into prepared loaf pan.

Combine ketchup and tomato sauce and pour over the top of turkey loaf. Sprinkle cooked bacon over the top of sauce. Bake for 45-50 minutes or until turkey is no longer pink and the edges begin to crisp.
