Ingredients

  • 8

    sheets lasagna pasta

  • 9 oz. bag fresh baby spinach

  • 1/8-1/4

    t nutmeg

  • 1/2

    t tuscan sunset

  • 8

    oz. mushrooms

  • 1

    T butter

  • 1/2

    cup feta cheese

  • 1/2

    cup ricota cheese

  • 1

    cup mozzarella

  • 8

    slices ham (optional)

Directions

Cook the lasagna pasta in boiling water for 5 minutes or until soft. Remove and place in cold water. Wash, then wilt the spinach ( we did this by cooking in a glass bowl in the microwave for 2 minutes). Chop the spinach and mix it with the nutmeg and tuscan sunset. While the spinach is still warm, add the feta and ricotta and stir to mix---taste, as it might need some salt and pepper. Wash, slice, and soften the mushrooms in 1 T butter (again this is simply done int he microwave for 2 minutes). Divide the spinach into 8 portions. If you are using ham, slice it to the same size and the pasta. To assemble each roll-up, on each lasagna noodle, place a slice of ham (if using), then the spinach cheese mixture, and sprinkle with the mushrooms. Gently roll. Place in a greased glass oven-proof pan. Sprinkle with the mozzarella cheese and bake for 30 minutes.
