Ingredients

  • Cinnamon Glaze:
  • 1/2 cup light brown sugar
  • 1/2 cup 100% pure canola oil
  • 2 tbsp apple juice
  • 3 eggs
  • 1/2 cup quinoa flour
  • 2/3 cup almond flour
  • 1 tbsp ground cinnamon
  • 1 tsp baking powder
  • 3/4 cup diced apples
  • 1/4 cup icing sugar
  • 1-1/2 tsp water
  • pinch ground cinnamon

Step 1

Lightly grease one 8 x 4-inch loaf pan or two 5-3/4 x 3-1/2-inch loaf pans.

In a bowl, whisk together sugar, oil, apple juice and eggs for about 2 minutes or until lightened in colour.

In a separate bowl, stir together both flours, cinnamon and baking powder. Gently whisk dry ingredients into oil mixture, mixing just until combined. Fold in apples. Scrape batter into prepared pan.

Bake in centre of 350°F oven for 35 to 40 minutes or until top of loaf springs back when lightly pressed. (Smaller loaves will take between 25 and 30 minutes.) Remove pan to wire rack to cool completely.

Cinnamon Glaze:

In small bowl, whisk together icing sugar and water until thick but still pourable. Whisk in cinnamon. Remove loaf from pan. Using tines of a fork or a knife, drizzle glaze over loaf.
