Tortellini Soup

Ingredients
- 1 pound turkey sausage (important to use sausage, not ground turkey)
- 1/2 onion chopped
- 2 garlic cloves, minced
- 2 tablespoons olive oil
- 3 cans beef broth
- 1/2 cup red wine
- 2 cups of water
- 1 8 ounce package baby carrots
- 2 zucchini, sliced
- 1 9 ounce package fresh cheese tortellini (Butoni three-chesse variety works well)

Preparation
Step 1
1. In a large pot, saute sausage until lightly browned and crumbly. Remove from pot.
2. Saute' onion and garlic in olive oil until soft and then add the sausage back to pot with the rest of the ingredients except the tortellini.
3. Simmer for one hour and add the tortellini the last 25 minutes. If the soup is too thick, you can add water or more broth.
