Turnip Souflee

Ingredients
- 1 turnip, peeled
- 1/4 cup margarine
- 1/4 cup flour
- 1 tsp baking powder
- 2 egg yolks (separate and reserve whites)
- 1 tsp brown sugar

Preparation
Step 1
Cook turnip until soft, then mash
mix margarine, flour, baking powder, brown sugar and turnip.
Mix in egg yolks and stir quickly
Let cool for 45-60 minutes
Beat egg whites until stiff
Fold into cooled turnip mixture
Pour into buttered casserole dish
Sprinkle with buttered bread crumbs
Bake at 350 degrees for 30 minutes or longer
