Sweet and Sour Salmon

Ingredients

  • 8-10 salmon fillets
  • 1 1/2 cups vinegar
  • 1 1/2 cups water
  • 1 1/4-1 1/2 cups sugar
  • 1 tsp salt
  • 1 tsp pickling spice
  • 1-2 onions

Step 1

Slice the onions and put on the bottom of a good quality 9x13 foil pan. Add vinegar,water,sugar and salt. Place pan on flame and bring to a boil. Add the pickling spice,preferably in a net.Place the fish slices close together. Bring to a boil again,lower flame and cover tightly. Continue cooking on a low,gentle boil for 20-30 minutes. Let cool to room temp. Don't remove fish from pan at this point because it will break. Remove foil cover,replace it with a plastic wrap over the cooled pan,closing securely. Reseal the foil on top of the plastic.Place pan in fridg. For long term storage,next day transfer fish to a glass (Pyrex)dish. Marinate for 2-3 days before eating. It can last in the fridg.up to two weeks.
