Beef Enchiladas

  • 1 lb ground beef
  • 1 small onion chopped
  • 1 cup "creamed" cottage cheese
  • 1 (10 oz) can diced tomatoes & green chilies / undrained
  • 1 (8 oz) can tomato sauce
  • 10 ( 6") flour tortillas
  • 2 cups (8 oz) Mexican cheese
  • chopped cilantro


Preparation time 20mins
Cooking time 40mins


Step 1

Brown the beef and onion.
dd cottage cheese.
Process tomatoes and tomato sauce till smooth.
Spoon 2-3T of ground beef down the center of tortilla.
Top with 2T tomato mix and cheese.
Roll up tortillas and place seam down in greased 13 x 9" pan.
Pour remaining sauce over top and sprinkle with cheese and Cilantro.

Bake 350* for 20 min
