Ingredients
- 1 tablespoon olive oil
- 1 red bell pepper, chopped
- 1⁄2 small Vidalia onion, chopped
- 1 clove garlic, minced
- 1⁄2 cup dry white wine
- 2 cups heavy whipping cream
- 1 (8-ounce) package cream cheese, cubed
- 1 (8-ounce) package Velveeta cheese, cubed
- 1 pound lump crabmeat, picked free of shells
- 1 (4-ounce) can chopped green chilies
- 1⁄4 cup fresh lime juice
- 1⁄4 cup minced green onion
- 1⁄4 cup minced fresh cilantro
- 1 tablespoon taco seasoning
- 1 teaspoon chili powder
- 1 teaspoon salt
- 1 teaspoon crushed red pepper
- Garnish: fresh cilantro
- Tortilla chips

Preparation
Step 1
In a 4-quart saucepan, heat olive oil over medium heat. Add red bell pepper, onion, and garlic. Cook for 3 minutes. Stir in wine, and cook until liquid is reduced by half, stirring frequently. Add cream, cream cheese, and Velveeta, stirring until thickened. Stir in crabmeat, chilies, lime juice, green onion, cilantro, taco seasoning, and chili powder; simmer for 15 minutes. Add salt and crushed red pepper. Garnish with fresh cilantro, if desired. Serve hot with tortilla chips.
