Ingredients

  • 4 1/2 oz porcini or shitake mushrooms
  • 3 c boiling water
  • 1 1/2 lb white bread cut into 1/2" cubes
  • 1 c plus 2 tbsp margarine
  • 3 red onions chopped
  • 12 oz white or brown mushrooms sliced
  • 3 c celery chopped
  • 1 c parsley chopped
  • 3 tbsp rosemary chopped
  • 3 tbsp tarragon chopped
  • salt and pepper

Preparation

Step 1

place shitake mushrooms in bowl. add 3 c boiling water. let soak until softened, about 30 minutes. drain, reserving liquid. squeeze mushrooms to remove excess liquid. cut out stems and slice mushrooms.
preheat oven 250 degrees. spread bread cubes on cookie sheet. bake until dry but not hard, stirring occassionally, about 40 minutes. place in large bowl.
preheat oven to 350
generously butter 4 quart baking dish. melt butter in heavy large skillet over medium heat. add onions and cook until tender, about 8 minutes. add white mushrooms and saute until tender, about 8 minutes. add shitake mushrooms and celery and saute 1-2 minutes. add mushroom mixture to bread. mix in herbs. season with salt and pepper. mix in 3/4 c mushroom liquid. transfer mixture to prepared baking dish. cover with foil. bake 1 hour, until heated through.
