Ingredients

  • 2 teaspoons canola oil
  • 4 ounces smoked turkey sausage, sliced diagonally
  • 2 cups frozen diced hashbrown potatoes
  • 1 cup zucchini, sliced
  • 1 cup red bell pepper, chopped
  • 0.66 cups onion, chopped
  • 2 cloves garlic, minced
  • 0.5 teaspoons chili powder
  • 0.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 0.5 cups salsa (for serving day)

Preparation

Step 1

In a large nonstick skillet, heat oil over medium heat. Add sausage, potatoes, zucchini, red bell pepper, onion, garlic, chili powder, salt and black pepper to skillet. Cook for 4-5 minutes or until sausage is lightly browned and vegetables are tender, stirring occasionally.
Freezing Directions:

Prepare as directed above. Allow to cool. Once cooled, divide into indicated number of freezer bags. Label and freeze. TO SERVE: Thaw. Heat in microwave for 1-2 minutes until heated through. Serve salsa on top of sausage mixture.
