Step 1

1. Let stand 1 hour to room temperature. Preheat oven to 375.

2. Rub roast with salt and pepper - place in roasting pan - fat side up. Do NOT cover or add water.

3. Cook at 375 for 1 hour. Turn off oven - DO NOT OPEN DOOR. Regardless of length of time meat has been in oven reset temp to 375. Cook for 30 to 40 minutes.

5. 1 cup salt, 1/2 teaspoon onion powder, 1 Tablespoon Lawrys, 1/2 teaspoon pepper and 1/ Tablespoon celery salt.

6. Mix seasonings (this is more than 1 roast. Coat meat.

7. Roast fat side up at 450 for 1/2 hour, then 325 for remainder.

8. Medium Rare to medium TOTAL cooking time should be 1/2 hour per pound.

9. Ausjuice - 1 can beef consomme around meat (not over) 15 minutes before done. When slicing meat will add natural juices.
