  • 1 chopped red pepper
  • 1 chopped small red onion
  • 1 1/2 cup whole wheat rotini
  • 1/2 c fresh basil
  • 2 cloves garlic
  • 2 Tbsp fat free plain yogurt
  • 2 Tbsp olive oil
  • 2 Tbsp fresh lemon juice
  • 2 Tbsp water
  • 1/2 tsp grated lemon zest
  • 1/2 tsp coarse salt

Step 1

Coat asparagus, red pepper and red onion with cooking spray. Grill until crisp tender about 12 minutes. Cook pasta. For dressing puree basil, garlic, yogurt, olive oil. lemon juice, water, lemon zest and salt. Toss vegetables, pasta, and dressing. Top with 3 oz chicken.
