Ingredients

  • 3/4 lb. fusilli

  • 4 Tbs. butter

  • 1/4 cup flour

  • 2 cups milk

  • 1 tsp. salt

  • 1/4 tsp. black pepper

  • 1/4 lb. mozzarella cheese, grated

  • 1/4 lb. Fontina cheese, grated

  • 2 oz. gorgonzola cheese, chopped

  • 1/2 cup grated parmesan

Directions

Butter a 7x12 inch baking dish. Cook fusilli in boiling, salted water until just done. Drain. In a medium saucepan, melt the butter over moderate heat. Add the flour and cook, whisking, for 1 minute. Whisk in the milk, salt and pepper. Bring to a boil, whisking. Reduce the heat and simmer, stirring occasionally, about 5 minutes. Remove from the heat, add the pasta and cheeses and toss. Put into baking dish and broil until top turns golden brown, about 3 minutes.
