Baked Chicken and Ziti

Ingredients

  • 1/2-lb boneless, skinless chicken breasts, cut into bite-size pieces
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 (28-oz) can crushed tomatoes
  • 1 tsp Italian seasonings
  • 1/4 tsp black pepper
  • 2 cups ziti or penne pasta
  • 2/3 cups nonfat ricotta cheese
  • 1/3 cup mozzarella cheese
  • 2 tbsp Parmesan cheese

Step 1

Preheat oven to 375.
Spray skillet with Pam; heat to medium heat. Add chicken and cook 7 to 8 minutes, til browned. Remove to plate. Spray skillet with more Pam. Add onion and garlic; cook about 5 minutes, til soft. Add tomatoes, Italian seasoning and pepper; bring to a boil. Reduce heat to low and simmer til thickened slightly, 8 to 10 minutes.
Meanwhile, cook pasta. Drain and mix with ricotta. Pour 1/2 tomato mixture in 13x9 inch baking dish. Layer with ziti, chicken and remaining tomato mixture. Sprinkle with cheeses. Bake til hot and bubbly and cheese is melted, 15 to 20 minutes.
