Beef Stew

Ingredients
- 2 lbs cubed stew meat
- 4 cloves garlic, minced
- 1/2 lg red onion, sliced
- 1 bunch of asparagus, chopped
- 2 large carrots, peeled and sliced
- 1 large zucchini, sliced
- 2 cups chopped kale
- 1 lg red bell pepper, seeded and chopped
- 2 T. cumin
- 2 pinches sea salt
- 2 pinches pepper
- 2 bay leaves (remove before eating)
- 32 oz can stewed tomatoes
- 2 t. oregano
- 1 - 2 T. kuzu root (mixed in cold water) to thicken

Preparation
Step 1
Place all ingredients in a crockpot except thickener and cook on low for 6-8 hours. Remove the bay leaves before serving. Add thickener if needed at the end of cooking, stir and cook until it is thickened.
