Ingredients

  • 2 lbs cubed stew meat
  • 4 cloves garlic, minced
  • 1/2 lg red onion, sliced
  • 1 bunch of asparagus, chopped
  • 2 large carrots, peeled and sliced
  • 1 large zucchini, sliced
  • 2 cups chopped kale
  • 1 lg red bell pepper, seeded and chopped
  • 2 T. cumin
  • 2 pinches sea salt
  • 2 pinches pepper
  • 2 bay leaves (remove before eating)
  • 32 oz can stewed tomatoes
  • 2 t. oregano
  • 1 - 2 T. kuzu root (mixed in cold water) to thicken

Preparation

Step 1

Place all ingredients in a crockpot except thickener and cook on low for 6-8 hours. Remove the bay leaves before serving. Add thickener if needed at the end of cooking, stir and cook until it is thickened.
