Ingredients

  • 4 slices of bacon (cooked until crisp, then cut into bite size pieces)
  • 1 small onion, finely chopped
  • 1 medium carrot, thinly sliced
  • 2 cups whole peeled tomatoes
  • 1 15.5 oz. can Goya Great Northern Beansm undrained
  • 1 1/2 tsp. Italian seasoning
  • 1 chicken bouillon cube
  • 3 cups water
  • 1 cup tubular pasta
  • Salt and pepper to taste

Preparation

Step 1

In a large saucepan, cook bacon until crisp. Add onion, carrot and tomatoes. Cook 5 minutes. Stir in beans, Italian seasoning bouillon and water. Bring to a boil. Add pasta and cook 8 to 10 minutes or until al dente. Add salt and pepper to taste. Serve with grated Parmesan cheese and chopped parsley, if desired.
