Dungeness Crab Football (shaped) Poppers with Trio of Sauces

Ingredients
- Poppers:
- 24 each 2-inch wonton squares (cut each into a football shape)
- 1/2 lb cream cheese
- 1 oz butter
- 1 leek, finely chopped
- 1 cup water
- 1 qt salad or frying oil
- 1 lb Dungeness crab meat
- 4 oz ponzu
- 4 oz peanut dipping sauce
- 4 oz jalapeno sauce
- Sauces:
- Peanut-
- 1/4 cup peanut butter
- 2 tbs sugar
- 1 tsp chili flakes
- 3 tbs rice vinegar
- Ponzu-
- 1/4 cup soy sauce
- 2 tbs yuzu fruit juice
- 1 tbs rice vinegar
- Jalapeno-
- 1/4 cup fish sauce
- 2 tbs sugar
- 2 tbs rice vinegar
- 1/4 bunch cilantro, finely chopped

Preparation
Step 1
Poppers:
1. Saute the chopped leeks in butter until sweated. Allow to cool and mix with the cream cheese and the crab meat.
2. Place 2 oz of the mixture on one half of the wonton skin, rub the edges with water, place another wonton skin on top and press together tightly to remove all air. Repeat as much as possible.
3. Place the salad oil in a skillet on medium high heat to allow it to reach temperature, about 2 minutes, and fry the poppers for 2 1/2 minutes on each side or until golden brown.
Sauces:
For each sauce, place all its ingredients in a bowl and mix together.
