Poached Salmon Steaks

Ingredients
- For salmon:
- 4 cups water
- 1/2 cup dry white wine
- 2 Tbsp lime juice
- 2 slices onion
- 1/2 cup carrot slices
- 1/2 cup celery slices
- 2 sprigs parsley
- 8 whole peppercorns
- 1 tsp salt
- 1 bay leaf
- 2 salmon steaks or fillets
- For lime sauce:
- 1 Tbsp butter
- 1 Tbsp flour
- 3/4 cup poaching liquid
- Dash of dill weed
- Salt and pepper

Preparation
Step 1
Combine all ingredients except salmon. Bring to a boil, simmer 10 minutes in a large skillet, covered. Place salmon in liquid. Add boiling water to cover if necessary.
Return to a boil, reduce heat, and simmer 10 minutes per inch of thickness. Place on serving plate, reserving 3/4 cup poaching liquid for the sauce.
Lime sauce:
Melt butter, blend in flour. Stir in reserved poaching liquid and add seasonings. Pour over salmon.
