Nutty Pork Fried Rice

Ingredients
- 2 C Rice
- 1/2 pork tenderloin
- 1 T canola oil
- 2 scallions, sliced
- 2 cloves garlic
- 2 stalks celery
- 1/2 C shelled edamame
- Rice vinegar
- soy sauce
- Choice of salted peanuts, sliced almonds, or cashews

Step 1
Cook 2 C white or brown rice (your choice) in 4 C water, seasoning with salt.
Cut the pork into cubes, and brown in a skillet with canola oil until nice and brown. Add the sliced scallions, minced garlic, and celery sliced on a diagonal. Saute until vegetables are softened.
Add the rice and edamama and continue to cook until rice has browned lightly.
Serve with Rice vinegar and soy sauce to taste. Sprinkle with nuts prior to serving.
