Ingredients

  • whole wheat bread, cut into cubes (7-8 cups)
  • 1 tsp olive oil
  • 8 oz sausage, casing removed
  • 2 celery stalks, finely chopped
  • 3 garlic cloves, minced
  • 1 large onion, finely chopped
  • 1.5 cups chicken stock
  • 1 egg, lightly beaten
  • 1/4 cup chopped parsley
  • 2 tsp rosemary, chopped
  • 2 tsp sage
  • 1.5 cups chestnuts

Step 1

Preheat oven to 200. Arrange bread on a parchment lined baking sheet. Bake until dried out, 8 minutes.
Raise oven temp to 350. Heat oil in a large nonstick skillet over medium. Brown sausage, breaking up meat with a wooden spoon, for 4 minutes. Stir in celery, garlic, onion, and chestnuts. Reduce heat slightly, cook, covered, stirring occasionally, until veggies are soft, 10-12 minutes.
Let cool slightly.
Combine bread, sausage, veggies, stock, egg, parsley, rosemary, and sage in a large bowl and mix well. Transfer stuffing to a buttered baking dish. Cover with parchment lined foil. Bake for 45 minutes. Turn on broiler. Uncover stuffing and broil close to heat until top is golden brown and crunchy, 1 minute. Let stand for 5 minutes before serving.
