Serve this lovely lasagna with a simple green salad and Italian bread for a complete and satisfying meal.

Ingredients

  • 1 box lasagna noodles (uncooked)
  • 2 jars spaghetti sauce (I use Classico 4 cheese or onion and garlic)
  • 1 pound mozzarella, grated
  • 1 pound cheddar, grated (I use sharp)
  • 1 cup Parmasan, grated
  • 1 (24-ounce) container cottage cheese (small curd)
  • 3 tablespoons parsley
  • 3 cloves garlic, minced (or use garlic press)
  • Salt and pepper
  • 2 eggs

Step 1

Mix cottage cheese, parmesan, salt and pepper, garlic, parsley and eggs in a mixing bowl.

Put of thin layer of sauce in the bottom of a 9x13-inch casserole pan, lay four pieces of lasagna side by side across the bottom. It does not matter that they don't reach the end, they will expand some while cooking.
Put 1/3 of the cottage cheese mixture on top of noodles and spread covering.

Spread half a jar of sauce on top of that, then sprinkle with a layer of your grated cheddar and Mozzarella (I mix these two together).

Put another 4 pieces of lasagna on top and repeat twice.

Lay your last 4 pieces of lasagna on top. Your cottage cheese mixture should be gone. You should have 1/2 a jar of sauce left. Put the last of your sauce on top, rinse the jars with just a little water and pour that on top as well. Sprinkle with grated cheese.

Bake in a preheated 325°F oven for 1.5 hours. Let rest for about 15 minutes before cutting.

Serve with a green salad and Italian bread.
